Ingredients
Scale
2 large grapefruits, peeled and segmented
2 ripe avocados, diced
1 cup baby spinach leaves
1/4 cup red onion, thinly sliced
1/4 cup feta cheese, crumbled
1/4 cup olive oil
2 tablespoons honey
2 tablespoons apple cider vinegar
Salt and pepper to taste
Instructions
In a large bowl, combine the grapefruit segments, diced avocados, baby spinach, red onion, and feta cheese. Gently toss to mix the ingredients without mashing the avocado.
In a small bowl, whisk together the olive oil, honey, apple cider vinegar, salt, and pepper until well combined.
Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
Serve immediately, or chill in the refrigerator for about 15 minutes to enhance the flavors before serving.
Notes
For added crunch, consider tossing in some toasted walnuts or pecans.
Substitute the feta cheese with goat cheese or omit it for a dairy-free option.
