In a large oven-safe skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.
Add the drained diced tomatoes, oregano, and basil to the skillet. Stir to combine and let it simmer for 2-3 minutes.
Return the chicken to the skillet, spooning some of the tomato mixture over the top. Sprinkle the shredded mozzarella cheese evenly over the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves if desired before serving.
Notes
For a spicy kick, add red pepper flakes to the tomato mixture.
Serve over cooked pasta or rice for a complete meal.
