1 pound beef sirloin, cut into 1-inch cubes
1 pound baby potatoes, halved
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)
Instructions
In a large bowl, combine the beef cubes with salt, pepper, thyme, and rosemary. Toss to coat the beef evenly with the seasonings.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned beef cubes and sear them for about 2-3 minutes until browned on all sides. Remove from heat and set aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
In a slow cooker, add the halved baby potatoes and the seared beef. Pour the garlic butter mixture over the top and stir gently to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
Once cooked, give everything a gentle stir and garnish with fresh parsley before serving.
Notes
For a spicier kick, add 1/2 teaspoon of red pepper flakes to the beef seasoning.
You can substitute the baby potatoes with sweet potatoes for a different flavor and added nutrition.
