  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the beef cubes with salt, pepper, thyme, and rosemary. Toss to coat the beef evenly with the seasonings.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned beef cubes and sear them for about 2-3 minutes until browned on all sides. Remove from heat and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. In a slow cooker, add the halved baby potatoes and the seared beef. Pour the garlic butter mixture over the top and stir gently to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  6. Once cooked, give everything a gentle stir and garnish with fresh parsley before serving.

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the beef seasoning.
  • You can substitute the baby potatoes with sweet potatoes for a different flavor and added nutrition.
