1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg
1 cup panko breadcrumbs
1 tablespoon olive oil
Zest of 1 lemon
Juice of 1 lemon
Fresh parsley, chopped (for garnish)
Instructions
In a medium bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
In another bowl, beat the egg.
In a third bowl, combine the panko breadcrumbs, lemon zest, and a pinch of salt.
Dip each piece of chicken first into the flour mixture, then into the beaten egg, and finally coat with the panko mixture. Ensure each piece is well-coated.
Preheat the air fryer to 400°F.
Lightly spray the air fryer basket with cooking spray or brush with olive oil.
Place the coated chicken bites in a single layer in the air fryer basket, making sure they are not overcrowded.
Spray the tops of the chicken bites with a little olive oil.
Cook in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F).
Remove from the air fryer and drizzle with lemon juice. Garnish with chopped parsley before serving.
Notes
For a spicier kick, add 1/4 teaspoon of cayenne pepper to the flour mixture.
For a gluten-free option, substitute all-purpose flour with almond flour and use gluten-free panko breadcrumbs.
