A comforting and creamy Finnish salmon soup that warms the heart, perfect for chilly days.

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 4 cups fish stock or vegetable broth
  • 1 cup heavy cream
  • 1 pound salmon fillet, skin removed and cut into bite-sized pieces
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 2 tablespoons fresh dill, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the sliced carrots and diced potatoes to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the fish stock or vegetable broth and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 15 minutes.
  4. Stir in the heavy cream, salmon pieces, and dried dill. Cook for another 5-7 minutes, or until the salmon is cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh dill and lemon wedges on the side.

Notes

  • For a lighter version, substitute half of the heavy cream with low-fat milk.
  • You can also add a handful of fresh spinach or kale during the last few minutes of cooking for added nutrition and color.
