A delicious and creamy soup made with cauliflower and white beans, perfect for a comforting meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 head cauliflower, chopped into florets
  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup almond milk (or any milk of choice)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the cauliflower florets, white beans, vegetable broth, thyme, salt, black pepper, and red pepper flakes (if using). Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the cauliflower is tender.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth.
  5. Return the soup to the pot, stir in the almond milk, and heat over low until warmed through. Adjust seasoning to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For added creaminess, stir in a tablespoon of nutritional yeast or a splash of lemon juice before serving.
  • You can add other vegetables like carrots or celery during the sautĂ©ing step for extra flavor and nutrition.
