Coconut Braised Beef is a comforting dish featuring tender beef cooked in a rich coconut milk sauce, perfect for serving over rice.

  • 2 pounds beef chuck roast, cut into 2-inch pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 ounces) coconut milk
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the beef pieces with salt and pepper, then add them to the pot in batches, browning on all sides. Remove the beef and set aside.
  2. In the same pot, add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Return the browned beef to the pot. Pour in the coconut milk, beef broth, soy sauce, brown sugar, lime juice, ground cumin, ground coriander, and red pepper flakes if using. Stir to combine.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it braise for about 2 to 2.5 hours, or until the beef is tender and easily shreds with a fork.
  5. Once cooked, taste and adjust seasoning with more salt, pepper, or lime juice if needed. Serve the braised beef over cooked rice and garnish with fresh cilantro.

Notes

  • For a spicier version, add more red pepper flakes or a diced jalapeño during cooking.
  • You can substitute the beef chuck with pork shoulder for a different flavor profile.
