A quick and delicious Cheesy Steak and Rice Skillet that combines tender flank steak, colorful bell peppers, and melted cheddar cheese over fluffy rice.

  • 2 cups cooked white rice
  • 1 pound flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced (any color)
  • 1/2 cup onion, diced
  • 1/4 cup beef broth
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the sliced flank steak and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 3-4 minutes until browned, stirring occasionally.
  2. Add the diced onion and bell peppers to the skillet. Cook for an additional 3-4 minutes until the vegetables are tender.
  3. Stir in the cooked rice and beef broth, mixing well to combine all ingredients. Cook for another 2-3 minutes until heated through.
  4. Sprinkle the shredded cheddar cheese over the top of the mixture. Cover the skillet and reduce the heat to low. Allow the cheese to melt for about 2-3 minutes.
  5. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the skillet while cooking the steak.
  • Substitute the flank steak with chicken breast or shrimp for a different protein option.
