2 cups fresh blueberries
2 cups fresh apricots, pitted and sliced
1 cup granulated sugar, divided
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 cup milk
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F.
In a large mixing bowl, combine the blueberries, sliced apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss gently to coat the fruit and set aside.
In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
Pour in the melted butter and milk, stirring until just combined.
Pour the fruit mixture into a greased 9×13-inch baking dish.
Spoon the batter over the fruit, spreading it evenly.
Sprinkle the ground cinnamon on top.
Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
Allow the cobbler to cool for about 10 minutes before serving.
Notes
For a twist, try adding a teaspoon of almond extract for extra flavor.
You can substitute the apricots with peaches or nectarines for a different fruit combination.
Serve warm with a scoop of vanilla ice cream for a delightful dessert.
