Balsamic Chicken and Veggie Orzo is a flavorful dish featuring tender chicken breasts marinated in balsamic vinegar, served over a bed of orzo pasta and sautéed vegetables.

  • 2 cups orzo pasta
  • 1 pound boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large bowl, whisk together balsamic vinegar, olive oil, garlic powder, oregano, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the marinade. Let them marinate for at least 15 minutes.
  4. In a large skillet over medium heat, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  5. In the same skillet, add the red onion, zucchini, bell pepper, and cherry tomatoes. Sauté for about 5-7 minutes, or until the vegetables are tender.
  6. Add the cooked orzo to the skillet with the vegetables and stir to combine. Slice the chicken and place it on top of the orzo and veggies.
  7. Garnish with fresh basil if desired and serve warm.

Notes

  • For added flavor, consider marinating the chicken for a few hours or overnight.
  • You can substitute the vegetables with any seasonal veggies you prefer, such as asparagus or spinach.
