Delicious and fluffy Apple Cinnamon Muffins, perfect for breakfast or a snack.

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tablespoon brown sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Fold in the diced apples and nuts (if using) until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. In a small bowl, combine the brown sugar and cinnamon for the topping. Sprinkle this mixture evenly over the muffin batter in the cups.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a healthier option, substitute half of the all-purpose flour with whole wheat flour and reduce the sugar by 1/4 cup.
  • Add a teaspoon of nutmeg or ginger for a spicier flavor profile, or mix in some raisins or dried cranberries for extra sweetness.
